Broccoli soup is a tasty soup you should enjoy every time you want to. The sumptuous soup can be cooked additionally to a major meal or enjoyed as a major meal in itself. You can enjoy it with cheddar as its toppings or with grated parmesan.
The soup is a perfect option for a vegetarian. Similarly, it is an appropriate meal to cure the flu and suitable during the cold weather of winter. Its ingredients are affordable and readily available in supermarkets. Also, it does not take to prepare your broccoli soup.
I could remember a visit to a friend’s house. She was so pleased to see my kid and me. She was ready to cook us anything that would satisfy our long journey to her place. After she was done cooking and we were served, I was surprised that she just gave us some portion of broccoli soup.
After we got back home, my daughter requested the meal over and over. I was forced to ask my friend for her recipe. Well, she (Ariel) shared it with me, and here is the recipe.
Ariel’s Broccoli Soup
Sauté 1 chopped onion and 1 large carrot in butter and a bit of olive oil
Add peeled potatoes that are quartered or eighth depending on the size of potato, resulting in 2 cups of chopped potatoes
Add broccoli florets and cauliflower if you like, loads of them
Add good quality vegetable stock (I like the Knorr gelatin pots)
Top up with water so all ingredients are submerged
Add salt, pepper, and a touch of cumin
Simmer for 20 minutes
Puree in food processor and you’re a done.
