Most markets these days have a decent ready-made pizza dough. We had a couple of families coming over on very short notice, and I wanted to get the kids fed quickly while also giving adults something to snack on once they’d tucked into a glass of wine. Skillet pizza is quick and easy, and it makes a festive centerpiece on the kitchen counter. I picked up a few whole wheat dough balls from the market (white works just as well) and a couple of balls of mozzarella. I already had pesto on hand, as well as some arugula. Preheat the oven to 500 or so. Meanwhile, roll half a pizza dough ball out with a bit of cornmeal and press it into a generously oiled (olive) 12-inch cast iron skillet. Slather with pesto and half a mozzarella ball (sliced), a generous flurry of salt, and grated parmesan cheese for a little extra sharpness (red pepper flakes are optional here). Cook until the crust and cheese are golden. Top with fresh arugula for adults and hold for kids. Delicious.
