#1. Carrot Soup

A simple 7-ingredient soup is excellent to keep you warm on cold nights.
Serves: 4
Prep time: 10 minutes
Cook time: 45 minutes
You’ll need:
Black pepper and salt pepper, to taste
4 cups of vegetable broth
3 tsp apple cider vinegar
1 ½ tsp fresh ginger, grated
2 cups carrots, chopped
3 cloves of garlic, smashed
1 cup yellow onion, chopped
3 tsp extra virgin olive oil
Optional:
Pesto
1 tsp maple syrup
Coconut milk, to garnish
Directions:
- Heat olive oil in a large pan on medium heat. Add onions along with pepper and salt. Cook until the onions turn soft and stir in between. Add carrots and garlic and cook for another 8 minutes while stirring in between.
- Add ginger, apple cider vinegar and broth. Simmer and continue to cook for 30 minutes or until carrots turn soft.
- Allow cooling a little before blending it using an electric blender. Continue to blend until the soup is smooth.
- Stir in the maple syrup if using. Add a dollop of pesto or a drizzle of coconut milk right before serving.
#2. Pumpkin Soup

A classic soup recipe that can be made in a jiffy. It’s full of flavour, creamy and thick and is THE soup recipe you’ll fall in love with!
Serves: 4
Prep time: 5 minutes
Cook time: 10 minutes
You’ll need:
Pepper and salt, to taste
250 ml of water
750 ml of chicken broth or vegetable stock
2 cloves of garlic
1 yellow/brown/white onion, sliced
1.2 kg pumpkin or butternut squash, cut into 1.5” chunks
To garnish:
150 ml cream, half and half
Directions:
- In a pot, add water, broth/stock, garlic, onion and pumpkin and cook on medium heat.
- Bring to a boil and reduce the heat to simmer for 10 minutes or until the pumpkin turns tender.
- Turn off the heat and blend the soup until smooth.
- Add pepper and salt and stir in the cream.
- Ladle the soup into bowls, drizzle cream, sprinkle a dash of pepper and serve with warm, crusty bread!

Prep time: 10 minutes
Cook time: 30 minutes
You’ll need:
1 cup cream, half and half
2 beef bouillon, crumbed
Pepper and salt, to taste
4 cups vegetable stock or chicken broth
9 tsp all-purpose flour
½ cup dry red wine
4 tsp thyme, chopped, divided usage
750 g brown mushrooms, washed and sliced
4 cloves of garlic, minced
2 onions, diced
3 tsp oil
4 tbsp butter
Directions:
- In a large pot kept on a medium-high flame, add oil and butter. Once it heats, add the onion and saute for 2 minutes or until softened. Toss in the garlic and cook for a minute or until it turns fragrant.
- Add in 2 tsp of thyme along with mushrooms. Stir in the wine and continue to cook for 3 minutes.
- Toss in the flour, mix and cook for 2 more minutes before adding the stock and bring to a boil. Reduce the heat to low and season with pepper and salt before mixing the bouillon cubes.
- Cover with a lid and simmer on low heat for 12-15 minutes, stirring occasionally until the soup begins to thicken.
- Stir in the cream and continue to simmer for another 2 minutes.
- Add in the remaining thyme with parsley and serve immediately.
#4. Spinach Soup

This healthy spinach soup is wonderfully delicious and nutritious. It can be made within 30 minutes and makes for an ideal lunch or starter.
Serves: 4
Prep time: 15 minutes
Cook time: 15 minutes
You’ll need:
½ cup heavy cream + more for garnish
Pepper and salt, to taste
4 cups vegetable stock or chicken broth
1 lb spinach, washed and stems trimmed
2 cloves of garlic, minced
1 bunch of green onions, chopped
1 onion, chopped
6 tsp extra virgin olive oil
Directions:
- Heat oil in a large dutch oven. Add green onion and onion. Cook until they start to soften or for 5 minutes. Add in the garlic, spinach and potato along with the broth and bring to a boil. Cook until the potatoes turn tender and spinach turns bright green or for 15 minutes.
- Add pepper and salt and remove from heat.
- Use an electric blender to blend the soup until smooth. Stir in the cream and serve hot with freshly made croutons.
Directions to make croutons:
- Melt butter in a medium skillet on medium heat. Add bread and cook, flipping often for 3 minutes or until the bread turns golden.
- Drain on a kitchen towel and season with salt.
