A couple of Sundays ago we went for breakfast at one of our favorite restaurants in Brooklyn, Prime Meats. We ordered the poached egg with smoked salmon on polenta, which was not only delicious, but a big exciting moment for me, since it has no gluten. The next day, my daughter asked me to make it at home, and although I was sure this was a surefire way to start a Monday off wrong, since I knew it would take me a while to construct, I did it anyway. Well, it took all of five minutes, and it turned out great. While making the polenta (which is made in the same time/way you’d make cream of wheat), I poached the eggs. Luckily I had some smoked salmon in the fridge! This is now going to be on my short list of dinner options when I have about 10 minutes to have it on the table, from the minute I walk in the door.
