I’m not a baker, so I certainly never imagined that I would bake my own bread. Why should I when other professionals do it way better?! But after a few dinners at friends’ homes, where the bread was warm from the oven, and amazing, and they all looked at me in total disbelief (an inner duh) that I hadn’t made the Jim Lahey no-knead bread yet, I decided to give it a go. I was totally skeptical that it would work out, but I figured that at worst it was going to be a fun project to do with my daughter. Well, it was fun, and sure enough, it tasted amazing. I say give it a try, but do remember that it is something you have to start the day before you want to serve it. That’s about as complicated as it gets.
