This spring break we went to Venice, where we fell in love with the Aperol Spritz. We came home imagining that we were going to introduce it to all of our Negroni drinking friends, since that seemed to be the drink they were all into when we left. But when we came back, they had already somehow discovered and moved onto the Aperol Spritz, or, “the spritz”.  Anyhow, if you’re looking for a nice drink to serve this summer, it sure is pretty, refreshing, not sweet at all, and doesn’t have a high alcohol content.  It does require having an open bottle of prosecco, so it’s a better drink to serve to more than two, unless you drink several at a time, or unless you save the prosecco for a day or two.

Here’s the recipe according to the official Aperol website, or you could just wing it like we do–fill a glass with ice, add half a glass of prosecco, a glug of Aperol, a dash of soda, and a garnish of orange.

3 parts prosecco

2 parts Aperol

1 part soda water

(over ice and with orange garnish)

    I studied abroad in Padua the true home of the spritz which can be made with campari or aperol and white wine with soda water. Optional are a gin floater and green olives. So remember if you are out of prosecco just use white wine and soda water, sum!
