It’s about as un-sexy as fluffy bedroom slippers but I’m going to go ahead and confess my love for my slow cooker. There, I’ve said it. And once I’ve my beloved behemoth is taking up precious counter real estate you can bet I’m going put it to work beyond stews for dinner (although those too). Why not throw a few things in at night and wake up to a warm and hearty breakfast on these cool fall days? We change up the extras regularly but lately we’re loving this combo that makes us nostalgic for our favorite childhood sammie.

Slow Cooker Peanut Butter and Banana Oatmeal

1 ¼ cups steel cut oats

2 cups almond milk
½ cup water

1 Tbsp flax meal
1 Tbsp chia seeds
1 tsp vanilla

¼ tsp salt
1/3 cup chunky or smooth peanut butter

1 ripe banana, sliced
1 Tbsp honey

1 Tbsp brown sugar


Place oats, almond milk, water, flax, chia, vanilla, salt and peanut butter in your slow cooker. Give everything a good stir to break up the peanut butter.  Arrange banana slices over top then drizzle honey and sprinkle sugar on top. Cover and cook on low over night. In the morning, serve with a splash of almond milk and top with nuts or coconut.

    Hi there,
    These sounded yummy… I have them in the crockpot now but there didn’t seem to be enough water. Most recipes I see for steel cut specify a 1:4 oats:liquid ratio… Should the milk and water Actually add up to 5 cups for this recipe?
    I hope they turn out okay!
