poached egg

As you can probably tell, we are crazy about a runny egg over just about anything that will sop up the yummy gooey mess. I realize that what I like about Huevos Rancheros the most is the eggs and beans combo, so why not try it with other readily available beans or legumes? Lately, I’ve been making a lot of lentils for dinner, and I always make enough for leftovers throughout the week. The other morning we had nothing in the house but eggs and leftover lentils. I put the two together—I happened to have poached the egg but fried or over easy would have worked just as well—and voila, a protein-packed star in the breakfast rotation.

    you inspired me – wrestling with Spring ‘regime’ of 3 oz protein, 1/2 cup starch and 1 cup of greens – made delicious dinner tonight of poached egg on steamed spinach and brown rice – very nice!
