We ate this delicious protein-filled salad  in the office the other day. Yolanda had pulled it together on a weekday morning with items you almost always have in pantry/fridge: carrots, celery, cucumbers, canned chickpeas, canned tuna, and hardboiled eggs. Any vinaigrette will do, though we love our garlic, lemon juice, olive oil, and mustard dressing. Pre-chopping vegetables in advance is on our list of New Year’s resolutions.
