I know I’m a little obsessed with the mandolin, but here’s another way to get your kids to down an entire sweet potato in one sitting: Mandolin as much of the sweet potato as you can fit on a cookie sheet. Drizzle with oil, sprinkle with salt, pepper, and cover with as much parmesan as you think will make it look like pizza. Roast until the corners start to get a little brown and cheese melts.

    I’m a huge fan of the kycoera mandolin and I set the oven to about 400.
