On a recent trip to France, we had marshmallows in a way that totally made us rethink them–beyond hot chocolate and s’mores. First we had them at a restaurant where they were on display in the center of the room, and they served them from the jar, table-side, cut to order. Then we had them at a lovely bakery, Pain de Sucre, where they make many different flavors every day.

I just found this great recipe, which I haven’t tried out yet, but will do this weekend. I love that this is a relatively easy dessert, that is gluten and nut free, and low in fat. And if you present it the way the French do, in a nice glass jar, where it isn’t precut, it’s also super impressive looking.
