I made a “croque monsieur” riff with leftover French toast, melted gruyere cheese, and turkey. You just use the French toast to make a grilled cheese (plus whatever cold cuts you have in the fridge). Ham or prosciutto are great subs for the turkey and it’s a nice way to make use of slightly stale bread. Wrap it in foil so it stays warm until lunch.
