Not all kids like avocado. My little one didn’t until last week when he saw me eating a piece of whole wheat toast with a quick version of guacamole–a half an avocado mashed up directly on the bread with a fork with a pinch of salt and a squeeze of lime (or lemon). Both boys asked if they could have what I was eating. High in vitamins A, B6, C, E, iron, and magnesium, avocados are one of those high-nutrient per calorie kind of foods. Good fat, filling, all of that good stuff.

    I use this idea with brown rice cakes too. Makes it easy to eat breakfast or snack at work.
