healthy easy nachoes

To me the Christmas season and Mexican food are synonymous. Weird right? I grew up in South Texas and every holiday that deserved a big celebratory meal in my house consisted of Mexican food. So, in the spirit of the season, here is a healthy (cheese-less) nacho recipe you can easily make with ingredients you already have at home:

Ingredients:

3/4 lb ground beef

2-3 tomatoes

lettuce

1 can of beans (pinto)

Trader Joes taco seasoning (optional. +this is gluten free, not all are)

1 can hot sauce

1 onion

1 bag corn tortilla chips

1 avocado

Directions:

Cook ground beef with onion and taco seasoning. Meanwhile, warm beans.

Slice & dice everything else and combine over chips.

    Ooo – does this look great. Yes, it seems Christmasy to me, and yes, I’m in south Texas. Might have to throw in just a little cheese. :)
