Everything looks better on a wooden cutting board and everyone loves a mini. Admittedly, I am not usually in favor of the upscale BLT—I long for toasted trashy white bread and crispy, vitamin-deficient iceberg, and will take great pains to gather low-brow ingredients in pursuit of that diner classic. But chances are, if you are like me and have a refrigerator full of microgreens, cherry tomatoes and locally-sourced slab bacon, you are likely to go the bougie BLT route, especially if you have half a baguette leftover from last night’s dinner. I find that turning everything into an appetizer (a la Cher in Mermaids) allows you to stretch food a little further—and small bites equals forced portion control.
