My brother Jason is a private chef, but he’s also a dad with not a lot of time on his hands, and knows how to improvise when it’s necessary to do a grocery store run, but no time to do it. One of his go-tos is this onion soup, that is anything but French. It’s super sweet, light, and filling. You could easily make it more substantial by adding rice into it if you like. All you do is sauté the onions in olive oil until clear, then put them in a pot with chicken stock, carrots…anything else you want to throw in, or have…add salt to taste…garnish with parsley and black pepper.
