Zucchini and a mandolin: The quickest most satisfying veg I can make for my family. I saute a smashed clove of garlic in olive oil and mandolin a zucchini directly into the pan. A little salt, parm and pepper to taste, even a few red pepper flakes if your kids like a bit of heat. Just watch those fingers while using the mandolin as you get to the end of the zucchini. Delicious!
