There are a handful of restaurants that we go to on a regular basis that have a few seasonal crostini on the menu. It occurs to me that crostini, like the quiche or the omelette, are perfect savory vessels for anything you have in the refrigerator or pantry. Take the hard-boiled egg, anchovy, and white-bean crostini with a drizzle of olive oil and pinch of salt from Franny’s in Brooklyn. Slice bread, rub with raw garlic, drizzle with olive oil and broil. Top with any number of pantry staples and melted or room temp cheeses. Think olives, capers, cured meats, canned tuna, sauteed greens, canned beans. Delicious for a snack, appetizer, and, yes, even a meal.
