There is no better way to pack a protein-fiber punch than with eggs and beans. The rice is also nice for soaking up the yolk (we like soft-boiled or poached eggs) and black beans. Though this combo is usually inspired by leftovers from Mexican takeout, we like to keep a can of black beans on hand just in case we have a taste for a Mexican breakfast. And yes, with a side of veg or a couple of slices of avocado, this counts as dinner.

    I used to tease my wife because everyday (literally) in college she would have a rice and bean burrito with BBQ sauce. :)

    The egg seems like the perfect way spice up the left overs!
