Last week I stumbled upon a sweet little Australian cafe in Midtown East, called Little Collins. They had something called Smash Toast, which was an avocado and feta mash, on toast. Since I stay away from bread as much as possible, I asked if there was another way I could get it, and they offered it up with two fried eggs on top. Then they topped that with pepitas, chili flakes, and some parsley. I am going to copy it as soon as possible.

    I also try to avoid bread and I love this idea. I poach poorly. Will need to work on that but this looks like a bit of heaven in the am
