Erica Moffitt is one lucky mom—she has an aunt, Lauren, who is an amazing cake maker, and clearly an idea person. For her great niece’s first birthday, which fell very close to Easter, Lauren went with a very sweet rabbit theme.
“As for the the inspiration for the cake for my daughter’s birthday was that it was almost Easter so Lauren wanted to make bunnies. But then she thought about how my late grandmother (her mother) used to read me Beatrix Potter books, and she ended up with Peter Rabbit. It was a way of including my grandmother in the event. She made the cake and came up with the idea without me. It was a very relaxed party where the whole family got together to color eggs. The cake was the biggest part of my daughter’s birthday. I was so touched, it was beautiful, the detail was beyond belief AND it tasted delicious. I have never seen my aunt make the same cake twice, I have no idea how her brain operates!”
